Fiscalini Cheese is a 4th generation family-owned dairy and award-winning cheesemaking operation, whose herd of Holstein, Jersey, and Brown Swiss cows graze across 504 acres in Modesto, CA. In fact, 75% of what the cows eat is grown on their own land! They're dedicated to sustainable farming practices, and the health and comfort of their cows: caring for their land and animals goes hand-in-hand. They even produce their own renewable electricity using a methane digester, powering their milking operation and cheese plant and selling excess power back to the city of Modesto as well as capturing greenhouse gases. The team at Fiscalini is committed to producing small-batch, hand-crafted farmstead cheeses.
