Vietnamese Meatballs

Don’t think Italian, these are Vietnamese. This family recipe comes from Chef Charles Phan’s aunt and in the Vietnamese kitchen, meatballs are all about texture. The meatballs are cooked just until they are messy and about to fall apart. Exactly how we like them! Drenched in a lightly sweet and savory tomato sauce.

Ingredients: Cream Co. pork butt, annatto seed, ground tomato, green onion, garlic, shallot, onion, water chestnut, light soy sauce, black peppercorn, white sugar, salt, cornstarch, cilantro, shallot oil, rice wine, son's fish sauce, caramel sauce (son's fish sauce, brown candy)
