Siggi Hilmarsson grew up eating skyr (pronounced "skeer"), a traditional yogurt that's been enjoyed for over a thousand years in Iceland. It's thick, creamy, and high in protein, using four times the amount of milk a regular yogurt would for one cup of yogurt. In 2004, Siggi was living in New York City, feeling homesick for the flavors of his childhood and tired of the overly sweet, artificial yogurt flavors he found on the shelves in the US. Working off a recipe his mother sent him, Siggi began making yogurt in his tiny NYC kitchen—but he was so successful that within a few months, he had to move his operation to a full-scale dairy plant in upstate New York.
True to the Icelandic tradition, Siggi's products never contain artificial preservatives, thickeners, sweeteners, flavorings, or colors. They use milk from family farms in upstate New York and Wisconsin whose cows are never treated with growth hormones. Their labels are designed to tear off easily, so they can be recycled separately from the #5 plastic cups. Siggi's yogurt is always thoughtfully made using just simple ingredients, not a lot of sugar, and a fun, seasonal range of flavors!
