GOOD FOOD AWARD WINNER FOR 2015!
This is a riff on our fantastic,heralded apple cider vinegar, which we make using hand-pressed, organic apples on our Sebastopol farm. Once the vinegar is finished (a process that takes a year or more) we infuse it with anise hyssop from our organic garden and tarragon from our friend Ben Renaud's farm, Fop-Doodle Farm. The flavors of the herbs marry perfectly with the sweet tang of our apple cider vinegar. Cook with it or drink it straight -- either way it's a satisfying experience. You will never find a product like this anywhere else!
As small as our supply of apple cider vinegar is, it's even smaller for the apple cider vinegar with tarragon and anise hyssop. We'll have limited amounts available over the next few months, until the vinegar from the three barrels we are drawing from is completely gone. This vinegar comes from juice we pressed in 2013 -- we increased our production in 2014, but that vinegar won't be ready until December 2015 at the earliest!
