Pet Nat, short for pétillant naturel, can be made from any grape variety (Donkey and Goat uses Chardonnay) and is an ancient, traditional way to make sparkling wine. In this, its purest form, the ingredients are limited to grapes. After
spontaneous fermentation begins, but before it is complete, the wine is bottled. Fermentation continues inside the bottle, creating delicious bubbles with aromas of fresh pear, peach, citrus zest, and hints of floral and spice notes. This wine is extremely drinkable, with silky texture and a touch of
sweetness that is nicely supported by a backbone of acidity. Pair with anything on a sunny, warm afternoon, or enjoy with a cheese plate, fresh fruit, or simple crisp salads.
