Di Stefano Cheese is a family-owned dairy company located in Pomona, California, with deep roots in Italian cheesemaking traditions. Founded by Mimmo Bruno, who grew up in the Puglia region of Italy, Di Stefano Cheese specializes in crafting authentic Italian-style cheeses, particularly Burrata, which Mimmo was the first to recreate in the United States. The journey began in Puglia, where Mimmo learned the art of cheesemaking as a young boy, working in a local factory and eventually mastering the craft.

After serving in the Italian army, Mimmo moved to the United States and continued his passion for cheesemaking. He established Di Stefano Cheese, named in honor of his father and his oldest son, Stefano, who now works alongside him in the family business. Together, they have created a boutique-style cheese plant dedicated to producing the finest Italian cheeses, using milk from cows raised on large, healthy pastures and not treated with growth hormones like rBST.

Di Stefano Cheese takes pride in their artisanal approach, ensuring that every cheese is made with the utmost care and authenticity. The Bruno family’s commitment to quality is evident in every step of the process, from curd to the final product. They often share their passion with the community by demonstrating the art of cheesemaking, allowing audiences to witness the magic of transforming fresh curd into mozzarella and Burrata, followed by the joy of tasting the final, delicious product.
