Bayview Pasta is a labor of love by Joshua Felciano, the owner and "Il Pastaiolo." They source organic wheatberries from American farms, which lend a slight nutty aroma and light color to the finished pasta. The grains are milled at a low temperature to retain essential amino acids and nutrients often lost in commercial milling—a treatment which makes their pasta flavorful and more nutritious. It can take a full two hours to mill one pound of flour using this gentle process! That freshly milled flour then goes straight into the pasta, bringing along all of its essential nutrients, flavors, and aromas.
From farm to mill to table, Bayview Pasta is handmade using traditional rolling, sheeting, and extruding processes. Each batch of pasta has a milled-on date, so you'll know exactly when the flour was ground. It's hard to find anything more delicious or nutritious out there!
