Here, real plants are macerated to extract their essence, and sweetening is accomplished using grape must, wine, and/or sugar, instead of pre-prepared infusions.

The story of Dolin traces back to the year 1821 when Joseph Chavasse first identified the exceptional quality of Vermouth de Chambéry. His son-in-law, Ferdinand Dolin, inherited the recipe, laying the foundation for the eponymous company we know today. Dolin Vermouth quickly garnered international acclaim, with medals from prestigious exhibitions in Philadelphia, St. Louis, and London during the late 19th century.

Even today, Dolin Vermouth remains the gold standard for fine French vermouth. One of their iconic contributions to the world of mixology was the creation of the Blanc (also known as Bianco) style, including the celebrated Dry recipe that has graced cocktails since the 1920s.
