Fresh Goat Cheese, Pear & Arugula Ravioli
The delicate tartness of fresh goat cheese melds with sweet Bartlett pears and peppery arugula for ravioli that are brightly flavored and comforting at the same time.
How to cook it: Bring 3 quarts water to a rolling boil and add salt. Add pasta, stir once and reduce heat. Simmer 5–7 minutes to desired tenderness. Do not boil.
How to eat it: These creamy and fresh-tasting bites play well with rich, savory meats like crispy pancetta or braised beef.
