A cut that needs no embellishment: Filet Mignon is premium for a reason. Outstandingly tender and flavorful, it cooks quickly enough for dinner any night of the week but is still undeniably special and festive. We like it rubbed with herbs, garlic, salt, and pepper. Sear in a cast-iron pan, then finish in a hot oven (about 425ºF) until medium-rare.
