Ramps (a.k.a. Wild Leeks) are nature's most pungent and sweet spring allium. Every spring, in various parts of North America, ramps pop out of the ground and create quite the excitement. Ramps in West Virginia, Michigan and parts of Ontario, are celebrated in local festivals, fleeting appearances on menus throughout the country, and massive pickling projects for enjoying this delicacy throughout the year.
