Rush Creek Reserve is made only in the autumn, as the diet of Uplands Cheese's cows begins to change from the fresh pastures of a Wisconsin summer to the winter’s dry hay. It's designed to show off the rich texture of hay-fed, raw milk and the delicate ripeness of soft, young cheese - not dissimilar in style from the French cheese Vacherin Mont d’Or. The cheese is bound in spruce bark, which gives shape to the soft round and imparts a sweet, woodsy flavor to the cheese. Combined with the savory flavors born from the rind, this gives the custard-soft paste a deep but delicate richness.
Remove from your fridge and unwrap at least an hour before serving. To serve, gently cut around the top perimeter and peel away the rind to expose the paste. Spoon the decadent paste directly onto roasted potatoes or Brussels sprouts, or dip right in with a crusty baguette. This seasonal cheese is produced in very small batches—get your hands on a wheel before they're gone for the year!
Pair with a Manhattan, Champagne, a bold red wine, or a hearty ale.
