Atika is a blend of sheep and goat milk in roughly equal parts, this 3- to 4-pound tomme smells like warm melted butter and crème fraiche. Atika is aged between 3 and 6 months. This a farmstead cheese, the goats and sheep are raised and milked on the same farm that the cheese is made thus the milk is as fresh as it can possibly be. Pairs well with local, crisp apples.
Atika was a 2014 Good Food Award winner. This cheese also won a 2nd place ribbon in its class in 2014 at the American Cheese Society conference.
