Big Sur is a small format ash coated triple crème made of mixed cow and goat milk. It is named for the iconic coastline where Stepladder Creamery is located. The paste is smooth, rich yet tart, and stays firm as the cheese matures. The balance of farmstead goat milk and local cow milk provides a bit of goaty brightness without being overwhelming. The rind is made with vegetable ash, which gives the cheese it's distinct look, but also maintains the signature flavor. Pair with your favorite bottle of bubbly or a saison.
