We start with dry farmed tomatoes from our farmer friends, where they limit their use of irrigation encouraging the tomato vines to grow deep roots, tapping into the ground water. The resulting tomatoes pack an INTENSE flavor and are some of our favorites for canning. Here, we preserve them simply in their own juices and a pinch of sea salt to leave the rest up to your imagination and needs.
