Similar in appearance to the more common Fuerte Avocado, the Zutano has a glossy green skin that stays green but loses some of its sheen as it ripens. Usually one of the first varieties of the California Avocado season, the Zutano has a milder flavor and a lower oil content, making it more refreshing than rich. Its thin skin can sometimes make it difficult to easily peel or scoop out the flesh, but is thin enough to be edible.
