Mash them or bake them in peeled wedges with a lemon-saffron yogurt sauce: you won't be disappointed. They also make an exceptional sweet potato and butternut squash pie.
Why don't we wash them? Because it breaks down protecting layers on the potatoes, leaving them to go bad sooner. You will get more life out of them, if you wash them when you're going to use them.
