Also known as Borlotti beans, cranberry beans are nutty and complex. They will double in size when cooked and have a starchy texture similar to a new potato. These beans were just dried and harvested this year so they will cook up much quicker than dried beans that you can buy elsewhere (about an hour and twenty minutes if not soaked prior to cooking or 45 minutes if soaked for a few hours beforehand). Cranberry beans are the original Minestrone soup bean and they also are wonderful when used in place of a pinto bean in burritos or even refried!
