Eating lunch at your desk isn’t a chore when you have a fantastic antipasti plate to nibble on while you crank out your to-do list or listen in on that conference call. With just a few minutes of work, you’ll have a rainbow of colors and flavors to choose from in a mix-and-match that yields about three “not sad desk lunches.” Plus, we’ll share our favorite “aioli” cheat for the best and fastest dipping sauce we know of.

Mayonnaise (optional)
Step 1: Wash and slice the cucumber into long spears or coins, whichever you prefer.
Step 2: To make the optional aioli, mix equal parts mayonnaise (or mayo substitute) with olive tapenade. Spoon a few dollops into a small bowl or sealable container. Otherwise, enjoy the tapenade as is!
Step 3: To assemble: if you’re packing a lunchbox, fill it up with an assortment of drained mozzarella balls, cucumber slices, salami, olives, aioli, and crackers. We recommend slicing the apple at the last minute! If you’re enjoying your lunch right away, assemble the Instagram-worthy antipasti plate of your dreams, with aioli to dip your cucumber into and cute toothpicks or a small fork to help keep your fingers (and keyboard) clean.
