A Sonoma County heirloom, the Bodega Red was saved from extinction by Slow Food Russian River. David and his crew at Oak Hill Farm are excited to be a part of its revival. These white-fleshed potatoes have a vibrant red skin. Because these potatoes are newly dug and don't yet have fully cured skins, they should be used within a few days of delivery and kept in the fridge until use.
Please note: David prefers not to wash his potatoes before sending them to us. Washing new potatoes shortens their shelf-life and can damage the tender skins. They're grown in pretty light soil, though, so they should be easy to clean with a quick rinse in your kitchen sink!
