Fall is here! Unlike the more acorn-shaped Hachiya variety, this squatter, tomato-shaped Fuyu variety can be eaten firm. Enjoy them quartered into a grain salad with roasted Delicata Squash or simply eaten out of hand. They can be left to ripen for a few days until they reach a very soft, jelly-like consistency (much like a ripe Hachiya) and they'll be much sweeter.
