Martin Bournhonesque, first and foremost, is a chef's farmer. He spends half his time on his farm out in Salinas, and the other half managing the sales and delivery of his produce to various Bay Area restaurants. His greenhouse operation produces (amongst other things) delicious arugula, spring alliums and wonderful fresh bean varieties that are the delight of all the chefs who are blessed to work with them.
Though his farm isn't certified as organic, he uses ecologically responsible practices throughout his operation, such as crop rotation and manure-based fertilization.
