Small but mighty, this frilly chicory adds some volume to your salad and has all the nooks and crannies to bring dressing to your mouth, all while adding a nice bittersweet flavor to the equation. It's tied up during growth to protect the inner leaves from sunlight. These blanched heads are sweeter and more tender.
