The Sevillano (pronounced in the Spanish style, se-vee-yan-no) is a large, meaty olive, greenish-purple when ripe. When grown commercially to be pitted and stuffed, this variety is often harvested hard and green because the mature fruit is somewhat tender. At Good Faith Farm we wait until the very last chance to harvest before frost, so the fruit can fully ripen. The olives are then cured in a water wash & salt brine for 9-12 months. The Sevillano is a great addition to your dishes while cooking or baking (breads, pastas, tapenades, salads, etc.), but can also stand alone on your table to enjoy as you would any other fruit.
