Red onions have a sweetness that make them great for pickling, topping your burger, and slicing into salads. These onions are part of the new California crop, so they're barely cured. They may look a bit rough around the edges, with flesh exposed and not fully covered in the papery, cellulose layers you're used to with onions coming out of storage. They also won't last as long in your kitchen, so you should plan to use them within a week or two!
