Tomato Eggplant Soup

Two of our favorite summer veggies come together for this comforting dish. Our Tomato Eggplant Soup has an enticing smoky, nutty flavor from roasted eggplant, along with plenty of tomatoey-garlicky goodness. Heat in the microwave or on the stovetop and serve—we love it with a spoonful of Basil Butter or Avocado-Lime Crema stirred through for richness, and a few slices of good bread on the side.
