Black Bean Sauce

Black Bean Sauce is a building block of many Chinese, Korean, and other Asian recipes. It's a huge umami boost in sauces, and can also be used as a condiment. Contrary to popular belief, it doesn't use the black turtle beans you might be used to—the "black beans" here are fermented soybeans that give this sauce a sharp, pungent, salty, umami-powerhouse flavor. Try it in stir-fries, noodle dishes, tofu dishes, marinated meats, and more.
