Gaitania de Tolima comes from two producers, Norberd Quintero and Omar Villamil, located in the Tolima Department of southern Colombia. Huila borders this region to the south and Cauca lies to the west. Gaitania happens to be the the birthplace of the terrorist group FARC and is their last mountainous holdout. These days, FARC operates primarily out of the Amazon. The processing is the Colombian smallholder farm standard - manual depulping, fermentation for 18 hours in tiled tanks, washing in the same tanks, and drying on parabolic beds. As brewed coffee, it produces a juicy cup that is clean and crisp. Gaitania showcases notes of plum, black currant, and sliced almond. It results in a delicious cup of coffee.
