The Gravenstein is an early season favorite in the Bay Area. While they are a great out-of-hand snack, their tart and full flavor makes them perfect for baking into pies, cooking down into applesauce, or pressing into cider.
Gravensteins are one of the most delicious varieties, but certainly not the crunchiest in texture. They're somewhat of a softer apple, and should be kept under refrigeration until ready to be eaten.
