Our farm raises Holstein bull calves in partnership with a small Organic Valley co-op dairy member. Joe, the dairy farmer, feeds his bull calves on milk, alfalfa, and waste grain left over from the milking parlor. At about 3 months old, we bring them to our farm, at which point, the feeding of Organic grain ceases. We pasture them, and finish on organic alfalfa hay until they are about 650 lbs. We slaughter at about 8-9 months old. The meat is very tender and lean, with a slight marbling and a full meaty flavor, yet less beefy than our Limousin steers. It is pinker in color than a standard full grown steer, and allows us to butcher out smaller cuts. These dairy bulls have been raised according to organic standards from gestation, however, they are not Certified Organic. These bulls have never been fed any GMOs, given antibiotics or held in confinement systems. They are raised on grass pasture at our farm, and while at the dairy, they are managed according to organic practices which include pasture time.
