Baby broccoli

What You'll Need
Olive oil
Salt and freshly ground pepper

Step 1
Preheat the oven to 475°F. Line 2 sheet pans with foil or parchment. Set the pizza dough on the counter and let it come to room temperature.
Step 2
Trim the baby broccoli and cut into bite-size pieces. Seed and slice the bell pepper. Cut the cherry tomatoes in half. Pick the basil leaves and toss the stems. Remove the pepperoni from the package.
Step 3
In a sauté pan over medium-high heat, warm 1 tablespoon olive oil. Add the broccoli, season with salt and pepper, and cook until bright green and tender-crisp, 3 minutes.
Step 4
On a lightly floured work surface, divide each round of dough into 2 smaller rounds. Use your hands or a rolling pin to gently stretch and flatten each round into a disc about ¼ inch thick.
Step 5
Transfer the discs of dough to the prepared pans. Spread each with 1 to 2 spoonfuls of pesto and sprinkle with a handful of shredded mozzarella. Add your favorite toppings, mixing and matching however you like. (Do use a light hand and leave some space between toppings, so you don’t weigh down the dough too much.) Season with salt.
Step 6
Transfer the pans to the oven and bake until the crusts are golden around the edges and the cheese is bubbly, 12 to 15 minutes.
Step 7
Transfer the pizzas to a cutting board, cut them into wedges, and serve warm. Note: The pizza dough arrives frozen. Store it in the refrigerator to defrost before using.
