Colorful and nourishing, these veggie roll-ups take wheat tortillas and stuff them with a bounty of sweet winter squash, creamy avocado, black beans, and baby kale.

What You Get
Sprouted wheat tortillas
Cooked black beans
Pre-washed baby kale

Roasted winter squash
Crumbled feta cheese
What You'll Need
Olive oil
Salt and freshly ground pepper
Step 1
Wrap the tortillas in a paper towel and microwave until pliable, 1 to 2 minutes. Warm the black beans in the microwave, 1 to 2 minutes. In a bowl, toss a couple of handfuls of baby kale with a drizzle of olive oil and a pinch each of salt and pepper. Peel, pit, and slice the avocado.
Step 2
To build the roll-ups, place the tortillas on plates, and spread each with a spoonful of the black beans. Arrange the roasted winter squash, dressed kale, and avocado on top, and sprinkle with the feta. Tuck in the ends and roll up snugly.
Step 3
Cut the roll-ups in half and serve right away. Or wrap them and refrigerate for up to 2 days.
