Step 1
Place about 4 cups of arugula in a large bowl, drizzle with the Meyer lemon vinaigrette, season with salt, and toss to coat. Pick the mint, toss the stems, and tear the leaves. Heap the arugula into bowls, top with the watermelon, sprinkle with the feta, and scatter with the torn mint. Drizzle with olive oil, grind with pepper, and serve.
