Step 1
Seed and thinly slice the bell pepper. Cut cheese slices into quarters to match the size of the buns. Fold the turkey slices into halves or quarters.
Step 2
To build the sammies, place the buns on plates, and spread with the pesto. Top each with a few turkey pieces, a couple of cheese pieces, a small handful of spinach, and the bell pepper. Season with a pinch of salt and a few grinds of pepper.
Step 3
Serve the sammies right away. Or wrap them and refrigerate for up to 2 days.
