What You'll Need

Step 1
Warm 3 tortillas in the microwave for 30 seconds, or until warmed through and pliable. Cut a slit halfway up each tortilla.
Step 2
To assemble the wraps, arrange slices of turkey on the lower-left quadrant of each tortilla. Spread a layer of pesto on the upper-left quadrant. Drain a small handful of sun-dried tomatoes, and arrange them on the upper-right quadrant. Finally, add a small handful of spinach to the lower-right quadrant. Season with salt and pepper. Starting with the lower-left quadrant, work clockwise to fold the loaded tortillas into triangles.
Step 3
In a large skillet over medium-high heat, warm 1 tablespoon olive oil. When the oil is hot, add the wraps to the pan, and cook until warmed through and lightly browned, 2 to 3 minutes per side.
Step 4
Transfer the wraps to plates and serve warm.
