Seed and thinly slice the bell peppers. Cut the cucumber into thin spears. Place the pea shoots in a bowl, squeeze with lemon, season with a pinch of salt, and toss to coat. To assemble the wraps, lay each tortilla flat, and smear with a spoonful of hummus. Layer with the bell peppers and cucumbers, top with the pea shoots, and sprinkle with the feta. Tuck in the ends, roll them up snugly, and serve. Or wrap them and refrigerate for up to 2 days.
