A bright tomato sauce balances the spicy sausage in this classic pie. You don’t even need to shred cheese for this one—just scatter the mozzarella right onto the crust. Makes 3 servings.
Ingredients:
1 ball pizza dough (enough for one 12-14” pizza), thawed at room temperature for about an hour
6 oz tomato sauce
8 oz mozzarella, cut or torn into chunks
8 oz crimini mushrooms, sliced
8 oz sweet Italian sausage
Basil, roughly chopped

Instructions:
Step 1: Preheat oven to 500ºF, or its maximum temperature. Heat a small splash of olive oil in a pan, adding the sausage when the oil is hot. Sauté sausage for about 5 minutes until it���s cooked through, using a spoon or spatula to break it up into smaller chunks. Set aside.
Step 2: Stretch and roll out the pizza dough on a floured surface until it’s about a 12-14” round, and lay it on an upside-down baking sheet or pizza stone.
Step 3: Spread tomato sauce over pizza dough, leaving about an inch around the edge for the crust, then layer on sliced mushrooms, cooked sausage, and mozzarella.
Step 4: Bake pizza for about 10 minutes, or until golden brown and crispy. Top with freshly chopped basil and chile flakes if you choose!
