Salt is what anchors this sandwich. Without the feta, the flavors would muddle, and you’d end up with a pretty bland bite. Add in a few salty crumbles, and suddenly those same flavors soar. It’s a sandwich best enjoyed on the beach, where Samin ate hers as a child.

What You Get
Lavash
Orland Farmstand Creamery feta cheese
Organic cucumber
Step 1: Slice the cucumber into small coins, and crumble as much feta as you’d like on the sandwiches.
Step 2: Toast lavash until golden brown under the broiler or toaster oven.
Step 3: Pile the feta and cucumber slices onto the lavash, sprinkle with a bit of flaky salt, and roll up to serve!
