Are y’all ready for a throwback? The classic smothers chicken and broccoli in a golden cheese sauce. Mom would bake until bubbling and golden and spoon it all over fluffy rice.

What You'll Need

Step 1
Preheat the oven to 350°F. Set out a square baking dish (8 inches).
Step 2
Cut the broccoli into florets, and arrange the florets in a single layer in the bottom of the pan, reserving any extra for another use. Cut the chicken into bite-size pieces, and arrange it on top of the broccoli. Season with salt and pepper.
Step 3
In a bowl, stir together the cheese sauce, sour cream, and 1 teaspoon curry powder, and season with salt and pepper. Pour evenly over the chicken and broccoli and spread to smooth. Sprinkle with ¼ cup of the Parmesan and sprinkle with paprika, if you want that retro touch. Transfer the casserole to the oven and bake until bubbling and golden, 25 to 30 minutes.
Step 4
Reheat the rice in the microwave until steamed through and warm, 1 to 2 minutes.
Step 5
Heap the rice on plates, spoon the chicken and broccoli casserole over, and serve warm.
