Preheat the oven to 350°F. Remove the ribs from the kale, and tear the leaves into 3- to 4-inch pieces. Pile the kale leaves on a sheet pan covered in parchment or foil. Drizzle with 1 tablespoon olive oil, season with salt, and toss to coat. Bake until the edges are crispy, about 8 minutes. Sprinkle with ¼ cup of the Parmesan, return to the oven, and bake until dried out, 8 minutes longer. Serve warm or cool completely and store in an airtight container.
