Step 1
Slice half of the cucumbers into matchsticks, reserving the rest for another use. Peel, pit, and slice the avocado. Cut the nori sheets in half to form rectangles.
Step 2
In a skillet or sauté pan over medium-high heat, warm 1 tablespoon olive oil. When the oil is hot, add the mushrooms and 1 tablespoon soy sauce. Sauté until the mushrooms release their moisture and start to brown, about 6 minutes. Transfer to a bowl.
Step 3
Heat the rice in the microwave until warmed through, 1 to 2 minutes or according to package instructions. Transfer the rice to a large bowl and fold in 1 tablespoon rice vinegar, if you have some on hand. Sprinkle with the toasted sesame seeds.
Step 4
To build the hand rolls, set the nori sheets on a flat surface with the rough side facing up. Spread a layer of rice over the left half of each sheet. Lay some of the salmon, avocado, cucumbers, mushrooms, and pea shoots over the rice on a slight diagonal with the ends pointing toward the upper left corner. Starting with the bottom left corner, roll the nori into cones. Alternatively, set out the nori sheets, rice, and toppings so everyone can build their own rolls at the table. Serve with soy sauce for drizzling.
