Step 1
Line an 8-by-8-inch pan with parchment. Roughly chop the pistachios. Chop 3 tablespoons of dried cranberries, reserving the rest for another use.
Step 2
In a large bowl, combine 1 cup peanut butter, ⅔ cup honey, 1 teaspoon vanilla, if you have some on hand, and a pinch of salt. Stir in 2½ cups rolled oats, along with the chopped pistachios and cranberries, mixing until well combined.
Step 3
Press the mixture into the prepared pan and top with another piece of parchment. Use a measuring cup to evenly flatten the bars, pressing into the corners of the pan.
Step 4
Refrigerate until firm, at least 1 hour. Slice into 8 bars and serve, or transfer to an airtight container and store in the refrigerator for up to 1 week.
