This hearty Hawaiian plate lunch stacks a burger patty, umami-rich mushroom and onion gravy, and a fried egg on top of fluffy white rice for the ultimate comfort meal.

Note: The beef patties may arrive frozen for freshness. Store them in the refrigerator to defrost before cooking. If you need to defrost them same day, place the sealed package in a bowl of cold water, and leave the tap running in a thin stream for about 30 minutes.

Vegetable oil

Cornstarch or all-purpose flour
Step 1
In a large saucepan over medium-high heat, warm 2 tablespoons vegetable oil. Small dice the yellow onion. Add the mushrooms and onions, season generously with salt, and cook, stirring occasionally, until browned and softened, about 10 minutes.
Step 2
Add 2 cups beef broth, 4 teaspoons soy sauce, and ½ teaspoon Worcestershire sauce, if you have any on hand. Bring to a boil over medium-high heat. In a small bowl, stir ¼ cup cold water and 3 tablespoons cornstarch or flour together until dissolved. Pour the mixture into the boiling gravy, and stir until glossy and thickened, 30 seconds. (If using flour instead of cornstarch, cook for 4 to 5 minutes.) Season to taste with salt and pepper.
Step 3
Meanwhile, separate the burger patties, pat dry with paper towels, and season generously on both sides with salt and pepper. In a frying pan over medium-high heat, warm 1 tablespoon vegetable oil. When the pan is searing hot, add the beef patties and cook until browned on the first side, 3 to 4 minutes. Flip and continue to cook until done to your liking, 3 to 4 minutes longer for medium. Transfer to a plate.
Step 4
Warm the frying pan over medium-high heat (do not wipe out). Crack 3 eggs into the pan and season with salt and pepper. Fry until the egg whites are set and starting to brown around the edges but the yolks are still runny, 2½ to 3 minutes.
Step 5
Reheat the rice in the microwave until steamed through and warm, 1 to 2 minutes or according to package instructions. Slice 2 scallions.
Step 6
Heap the rice onto plates and top with the burger patties. Spoon the gravy generously over everything. Slide a fried egg onto each patty, sprinkle with the scallions, and serve warm.
