Step 1
Bring a pot of salted water to a boil. Peel and chop 4 cloves of garlic. Pick the parsley leaves, toss the stems, and chop the leaves.
Step 2
Warm 2 tablespoons of olive oil in a large skillet. Add the Korean BBQ beef and cook, breaking it up with a spoon as you go, until it begins to brown, 7 minutes. Add the garlic and cook until fragrant, 30 seconds. Add 1 cup of the beef broth to the pan and stir, scraping up any browned bits with a wooden spoon. Add 2 tablespoons of tomato paste to the pan with 1 teaspoon of salt and 1 teaspoon freshly ground pepper. Stir to combine and simmer to let the flavors meld, 10 minutes.
Step 3
While the sauce is simmering, add ¾ of the pasta to the boiling water and cook until al dente, 8 minutes or according to package instructions. Reserve ½ cup of the pasta water and drain the noodles.
Step 4
Add the pasta and reserved pasta water to the sauce and stir to coat. Divide the pasta between bowls, sprinkle with the parsley, and serve immediately.
