Step 1
Rinse and drain the chickpeas. In a large bowl, combine the chickpeas, kale ribbons, and half of the Parmesan. Dollop with the Caesar dressing, drizzle with the juice of ½ lemon, season with salt and pepper, and toss to combine. To build the wraps, lay the tortillas flat, and pile the salad in the middle. Tuck in the ends, roll them up snugly, slice in half, and serve. Or wrap them and refrigerate for up to 3 days.
