Red wine vinegar
Olive oil

Step 1
Stack and slice 4 of the lettuce leaves into shreds. Drain and chop the giardiniera. In a small bowl, whisk together 2 tablespoons red wine vinegar, 6 tablespoons olive oil, and a pinch of salt. Add 1 teaspoon dried oregano, if you have some on hand, and ½ teaspoon chile flakes, if you want a kick.
Step 2
Toast the rolls, split them in half, and pull out some of the bread from the inside to hollow out slightly. Brush the cut sides of the rolls with the red wine vinaigrette.
Step 3
To assemble the subs, place the rolls on plates and stack with the mortadella, salami, and provolone. Top with the peperoncini and lettuce and gently smash to hold together. Cut the subs in half and serve.
