Step 1
Peel and slice a 2-inch piece of ginger. Cut 4 slices of lemon.
Step 2
In a saucepan over high heat, combine 4 cups of apple cider with the ginger, 1 cinnamon stick, and 8 cloves, and bring to a boil. Turn down the heat, cover, and simmer until the flavors meld, about 15 minutes. Remove from the heat.
Step 3
Discard the spices and ladle the hot cider into 4 mugs. Top each cider with 2 ounces of mezcal, if you’d like it boozy. Serve warm, with a lemon slice on top.
