What You'll Need
Vegetable oil
Sugar Salt and freshly ground pepper
Mayo (optional)
Step 1
In a large frying pan over medium-high heat, warm 2 tablespoons vegetable oil. When the oil shimmers, add the ground chicken and cook until browned, about 7 minutes. Add ⅓ cup teriyaki sauce and stir to coat. Cook for 30 seconds to slightly reduce. Remove from the heat and set aside.
Step 2
Meanwhile, core and slice 3 cups of cabbage. Finely chop the pineapple. Slice the scallions. In a large bowl, whisk together 1 tablespoon vegetable oil, the juice of 1 lime, and 1 teaspoon sugar until the sugar is dissolved. Add the chopped pineapple, scallions, and the sliced cabbage. Season to taste with salt and pepper.
Step 3
Split and toast 12 of the sweet Hawaiian rolls.
Step 4
To build the sliders, place the rolls on plates, spread with mayo, if you have any on hand. Pile the chicken on top and drizzle with more teriyaki sauce. Top with a pinch of the pineapple slaw. Serve warm, with the rest of the pineapple slaw on the side.
