These pancakes make a festive treat all season long. Fold warm spices into the batter, and slide sautéed pears on top of a stack.

Step 1
Core and slice the pears. In a frying pan over medium heat, melt 1 tablespoon butter. Add the pears and sauté until tender, 5 minutes. Sprinkle with 2 tablespoons sugar and stir to melt and coat, 3 minutes longer.
Step 2
Meanwhile, in a large bowl, whisk together 2 eggs, 1½ cups buttermilk, and 2 tablespoons melted butter. In a separate bowl, whisk together 1½ cups flour, 2 tablespoons sugar, the gingerbread spice, 1 teaspoon baking powder, 1 teaspoon baking soda, and ½ teaspoon salt. Add the dry ingredients to the wet ingredients and stir until just combined.
Step 3
Warm a nonstick frying pan over medium heat, and grease with butter or vegetable oil. For each pancake, pour about ⅓ cup batter into the pan, and cook until golden, 2 to 3 minutes per side.
Step 4
Transfer the gingerbread pancakes to plates, and top with the pears. Drizzle with maple syrup or sift with powdered sugar, if you want more sweetness, and serve warm.
