What You Get
Baguette
Garlic
Broccoli rabe
Cannellini beans
Lemon
Shaved Parmesan cheese
What You'll Need
Olive oil
Salt and freshly ground pepper
Chile flakes (optional)
Step 1
Preheat the oven to 400°F. Line a sheet pan with parchment or foil.
Step 2
Slice half of the baguette into pieces about ½ inch thick, reserving the rest for another use. Place the pieces on the prepared pan, brush with olive oil, and season with salt. Transfer the pan to the oven and toast until golden, about 5 minutes.
Step 3
Peel 2 cloves of garlic and cut them in half lengthwise. Rub each piece of toast with the cut garlic.
Step 4
Cut the broccoli rabe into bite-size pieces. Rinse and drain the cannellini beans. In a large sauté pan over medium-high heat, warm 1 tablespoon olive oil. Add the broccoli rabe and a pinch of chile flakes, if you want a kick, and sauté until bright green and tender-crisp, 2 minutes. Add the beans and cook until warmed through, 2 minutes. Season with salt to taste.
Step 5
Pile the broccoli and bean mixture on top of the garlic toasts. Squeeze with lemon juice, sprinkle with the shaved Parmesan, grind with pepper, and serve warm.
